A mono-cultivar made from the Manzanilla olive. Best known as an eating olive (that are brined), Casas de Hualdo only produces a few thousand of these every year. Its very rare to find an EVOO made solely from Manzanilla. 

I am a super-fan of this Estate and the team that run it. I have visited it many times, toured the groves, watched the crush, and acted as a brand consultant for them.
