This particular bottle, 2020/2021 harvest, is Monocultivar of the prized terroir Etruscan varietal Caninese. More supple than say their coupage, Il Principe di Vulci. But the dominance of tomato leaf is singularly harmonic when smelled and tasted.
A Monocultivar is the one fantastic olive. Similar to listening to a solo musician playing at their best, the miller works the fruit given to them by the harvest. This changes year to year. That's what makes it so interesting.
This product is organic grown and will be labeled as such next harvest.
The flavors are abundantly fragrant, herb like, and very central Italian. With a corresponding intensity of bitter and pungent finish.
